There is a simple concept that can absolutely save Superman from the boringness of omnipotence and actually make a really really compelling story: make him go against the MAGA Trumpist state. Make him take "Truth, Justice, and American Way" seriously and show how you can't just punch your way out of fascism.
Wanna make it even more interesting? Have him actually take on billionnaires and their stranglehold on democracy. I mean you have Lex Luthor just lying around.
