Oh, that sounds annoying!
I'm wondering what the problem could be, though. I've never encountered this issue with Ubuntu or Debian-based distributions and an Nvidia GPU.
Could it be a Pop!_OS problem? Or are you using the DKMS driver, which needs to be recompiled after a kernel update?
It has recently become very easy to install and use an Arch Linux-based system, e.g. with CachyOS or Omarchy.
