@CactuarJoe@retro.pizza I read a blog article on this a while back. The person concluded that you could in fact caramelize onions, in their case, in the same amount of time that these recipes were saying... but you had to cut them super thin, use particularly high heat, and watch them like a hawk.
They described it as the most stressful vegetable caramelization they'd ever done.
