    First time making gimbap at home. This is a vegetarian version with fried tofu, egg, yellow pickled radish, spinach, cucumber and carrots. In case someone is interested, here are some pictures from the process:

        Looks great! I typically cut long veggie sticks, but I’ll try your shorter version next time round. I also add some roasted sesame seeds in the rice, you might want to try! Such a delicious and simple food ❤️

          Did you marinate the tofu? It looked very ham/sausage like at a glance!

            Yes, it’s cut into longish sticks, then fried, then marinated in soy sauce with some sugar and rice vinegar.

                    Gimbap is Korean, but it seems plausible to me that sushi might have had an influence on it. But there are lots of differences between them. The rice is seasoned differently, and the fillings are more numerous and variable and also more focused on vegetables, both fresh and pickled, and usually meat (or tofu).
