2 eggs, turkey, stuffing, hash brown casserole, dumplings and gravy. And all the cheese. Garnish with some cranberry sauce. Salt and pepper to taste.

Apologies for the lack of picture. I ate it already…

Edit: I made another one. Here’s pics before and after the extra cheese. Also, I added dumplings after.

For breakfast I sauteed leftover turkey and some onions, scrambled eggs into the pan, and then topped with some Swiss cheese.

After having a large leftover plate for lunch yesterday, I added some of the turkey to a packet of chicken ramen for dinner last night.

Gotta get creative or you’ll never get rid of the leftovers.

Turkey hash—like corned beef hash—is great, too.

I do something like this with left over chicken roast dinners. Delicious.

                  Agreed.

Some other good stuff to make:

                  • Turkey Pot Pie
                  • Breakfast Sandwiches
                  • Potato Hash (breakfast potatoes)
                  • Leftover cranberry relish or jelly? Heat it up, add a touch of cornstarch if needed, and a great pancake topping.
                  • Cranberry Danish or Bread (jelly makes a good swirl)
                  • Fried Mashed Potatoes (can make a breakfast hash OR Savory Pancakes with some onion and peppers)

You following me camera guy? 😉

Heat 1 cup of oil in a wok or other large pan.

Take 2 eggs, crack them in a glass and beat them with a fork.

Add a splash of lime juice, fish sauce, and a tablespoon of corn starch and beat it like it owes you money. The corn starch sticks otherwise.

Add whatever other ingredients you want.

When the oil is super hot, hold the glass of egg about a foot above the pan and pour it in slowly.

It will fry and expand into a giant, floating flower of eggy goodness the size of a dinner plate.

Flip it after a 30 to 60 seconds or so to get the other side.

                    Called a “Thai Omelette”.
