What’s an enchilada? I understood it to be like an oven bake burrito with extra sauce on top.

Take a sauce, in this case, a chili pepper based one, and fry it in oil. Then fry a corn tortilla in that. Then find something to put in the tortilla. Then you have an enchilada.
