    Not op but raita is just a thinned yogurt and cucumber. It’s one of those “made by feel” things so while there are online recipes with ratios it should be made to a texture you like. The cuke is usually shredded but can be minced or grated as well ( and combos exist as well). There’s a lot of variations which include other things like tomato, green chillies, or spices.

    Op appears to have made a thicker version with some mint added.

      Pan fry shrimp in a bit of peanut oil, lightly salt (I had a 800g frozen pack), set aside.

      Sauté 1 diced onion, 4 garlic cloves, thumb of ginger in the same pan.

      Add 3 spoons curry powder mix (I used turmeric, cumin, coriander, chili) and 2 spoons of tomato paste.

      Stir in 500 ml coconut milk + 100 ml water. Simmer 5–10 min.

      Add back the shrimp just to heat up for a couple minutes.

      Finish with juice of half lime.

      For the raita - I used ~500g greek yoghurt, with a grated cucumber (drained the water), a clove of garlic, a pinch of salt, the juice from half lime, and some fresh mint. (It’s very similar to tzatziki, without the dill and less garlic.)

      Maybe I’ve missed something everyone knows. I was expecting to see the recipe in the comments or post. Am I being stupid?

                    I use this community for inspiration. I usually post the recipe too, but not always, for various reasons. I always share it if someone asks, though.

                      This looks amazing, I make similiar curries all the time and they freeze really well without the shrimp - just add freshly cooked seafood when reheating for best texture!

                        That’s a good idea! Unfortunately I don’t really have the freezer space for ready made dishes, at most ingredients and such.
