    I got a craving for potato enchilada casserole. I never crave casserole. Yet here I am.

    I used canned enchilada sauce instead of making my own with supplies on hand so that bumped the cost a little.

    Cost per person: $2

      Not scared of your jalapenos I see (big fan also). Tonight doing something similar, beef tacos marinated in paprika, pepper, sugar, cilantro, garlic, jalapeño, and lime zest with a touch of oil. Going to cost a bit more than $2 per person though. Also I’m going with a tomato salsa, sadly no sour cream on hand.

        I would definitely smash. Sometimes I’ll do half beef half potato tacos. I assume this is like that, but with enchilada sauce. I love me some fresh jalapeno.

              I lived in Ohio for a few months in the 80s. I think it’s where my hate of casserole came from.

              With the enchilada sauce, pepperjack, onion, cilantro, green chilis and Serranos this is completely inedible to the average Midwesterner. They aren’t capable of handling that much flavor.

                I think it’s just the olives. Suggesting olives on enchiladas 'round here would be liable to get you shot.

                  I had some left over from pizza making so I tossed them on. I wouldn’t buy olives for this. Even Taco Bell got rid of their olives a long time ago.
