Pork loin, roasted broccoli, potato wedges, and stir-fried broccoli stems

    This was a quick meal from stuff I had laying around. Pork was seared in the instapot the cooked on high for 20 in a mix of apple juice, lemon juice, beef broth, and garlic chili paste. Potatoes could have been roasted longer. There wasn’t enough color on them. I just roasted them until the broccoli was done.

    The broccoli stems were a surprise hit. I regret all the times I threw them out. I slice them thin at an angle, then stir fried them on high and finished with garlic chili paste and soy sauce. They are SO GOOD!

      In hindsight I wish I had taken some of the juice from the pork and reduced it to a glaze to pour over it. Next time.

        Apple juice and pork, always a winner. You could have taken some of that pork broth mixture and braised the potatoes. I do feel bad when I toss out broccoli stems but I know that my chickens enjoy them even if I’m not eating them. Sometimes I’ll save them for making a slaw.
