Peanut butter corn tortilla roll-up.I frequently eat peanut butter and jelly burritos, because I always have flour tortillas on hand. I have a big stack of corn tortillas in the freezer that I have been using a lot lately too. I may give this a try and see what combinations, likely I will start with prickly pear jelly.

Peanut butter corn tortilla roll-up.I tried this plain (maize tortilla and peanut butter only), I also tried with prickly pear jelly, and a third with huckleberry jelly. All were good, of the three I think the prickly pear was my favorite. The maize added a unique flavor to the combo. All in all, I think I prefer my pb&j on a wheat flour tortilla, and my quesadillas on maize tortillas.
I am not writing this off totally though.

Peanut butter corn tortilla roll-up.One time I fired up the deep fryer and made pb&j chimichangas! That was really good, but difficult to keep all of the filling inside the tortilla.
