    I like my stainless pans from Costco. The exact item is “Tramontina 12-piece Tri-Ply Clad Stainless Steel Cookware Set”. I got it because it only has the pans I actually use. If you want a buy it for life set, stainless is pretty much your only option.

    I really thought I would miss the glass lids from my old set, but I’ve come to like the solid lids.

    I’ve had good luck “soaking” chickpeas for only an hour. Add to a pot with a pinch of baking soda (sodium bicarbonate). Bring to a boil, turn off the heat, and cover. Let sit for an hour. Drain and cook as if they soaked overnight.

    The amount of baking soda takes some trial and error. Not enough and they won’t cook through, too much and they’ll turn to mush.

    Since you have a great vinaigrette, why not turn it into a peanut sauce? Start with a good tasting vinaigrette, add peanut butter, and mix thoroughly. Once it’s mixed, you can add a little water to thin depending on what you’re using it for.

    What do you use to grind that amount of peppers and spices? And how about storage? Wouldn’t it be better/fresher if you made smaller batches more frequently? Or is year old homemade still that much better than store bought?

    I found the recipe you mentioned and it sounds delicious, especially after reading through the comments.

    Apparently you can use a hand mixer to shred meat while it’s still hot.
