Super easy, I was out of flour and craving pancakes for breakfast. I soaked a small coffee cup of quinoa over night in water, strained it in the morning, added a cup of fresh water and blended everything.

The pancakes taste slightly different than flour based ones, I prefer them in combination with savory toppings.

Are they thinner than pancakes? I saw the photo before the title and thought “those are some good looking crepes”

Potato pancakes are a well-known GF alternative, but you can also food-process cooked beans and combine with egg to make a serviceable pancake batter. Black beans -> purple pancakes

Yeah, they are thinner. More like crêpes.

Very similar to a French crêpes, just the taste was different.
