My new favourite breakfast wrap

    My wife and I have started making this for late breakfast/brunch on shared days off (doesn’t happen often since we both work shifts). The white drizzle on top is a homemade lime crema I made specifically for these wraps.

    Filling: eggs, onion, garlic, mushroom, peppers, feta, spinach, tomato, sun-dried tomato, parsley, basil, ham, spices (cracked black pepper and smoked paprika). I melted some havarti on the wraps too just before adding the filling.

    This was more of a “oh shit we need to use up some of this fresh produce before it goes bad” kind of meal but it turned out great so we added it to the rotation. Some of the flavours definitely do blend together so you could absolutely remove some ingredients and it would still work well, possibly better, but I think it’s still very good. I think next time I’ll cook some bacon, fry everything in the bacon fat, and omit the ham.

    I’m aware this probably isn’t the most appetizing to look at, definitely not foodporn worthy, but it tastes amazing. Highly recommended.

        Thanks. I did a barebones version, just sour cream, lime juice, lime zest, and a pinch of salt. I think normally you’re supposed to add garlic, but my wife is pregnant right now and instead of cravings, she gets food aversions, one of which is garlic. She can handle a little bit but not a lot. Since there was already garlic in the filling, I didn’t add any to the crema.

                  Looks amazing.

                  I have started doing breakfast wraps myself and also do smoked paprika, ill understand if this isn’t too anyone’s else’s sensibilities

                  eggs, Onions, tomatoes, feta, paneer (toasted or air fried to give it some skin) chorizo, dill, smoked paprika, Cayenne, salt and pepper to taste, squeeze of lime, chipotle Cholula (or other chipotle sauce you prefer) sour scream(though that lime crema would work fine, i just like thick sour cream (18%) Gay Lea Gold tub is my favorite when i can find it. So thick it’s amazing.

                  Any protein i have in fridge i might use up but cured chorizo is my fave

                  Ill use a medium sized onion, yellow or white if i have them, red onion if it’s what i got

                  Ill always keep about 1/3 of the tomatos i dice up for the last 5 minutes just for a nice flavour pop with them still a touch firm. Just dont cook then too long.

                  If i dont have enough feta ill add a small spoonful of sour cream and mix it in just before i take the mix out of the pan

                  I cook in order Onions add 2/3 diced tomatoes, add paprika heavy handed, chorizo, feta, rest of spices/seasoning, squeeze of lime, eggs, last of tomatoes

                  Been really enjoying these

                  if i have the ingredients in definately going to try the one that pushed

                  One thing i started because i have a lot sauces is a few different dabs in spaced our places in the wrap so i get to taste them individually and not all mixed together. Its nice

                                        Some of the best meals I’ve ever eaten were not much to look at. Funny how mismatched photos and taste can be. Thanks for sharing! I’ll have to try cooking these soon!
