Plus too little sheets left and I am trying to clear out my pantry.

Lasagna LinguineI had a few lasagna sheets left that were past the use by date and turned them into Linguine.
Soaked them in hot water for a few minutes and cut them.

Gluten free quinoa pancakesSuper easy, I was out of flour and craving pancakes for breakfast. I soaked a small coffee cup of quinoa over night in water, strained it in the morning, added a cup of fresh water and blended everything.
The pancakes taste slightly different than flour based ones, I prefer them in combination with savory toppings.

Chickpea curryMilder as my kids don’t like it spicy. So here’s my recipe:
2 TS of butter or ghee 2 white onions, chopped 2 cloves of garlic, chopped 1 tsp of fresh ginger, grated 1/2 bird eye chilli, finely chopped 2 TS Garam Masala 1 TS of cumin 1 tsp of turmeric Pinch of cinnamon, muscat and curry powder 1 can of tomatoes, diced 1 can of chickpeas Veggie broth (approx. 200-300 ml) 120 ml of fresh cream Salt and pepper 2 TS of Greek Yoghurt Fresh coriander and lemon
Strain the chickpeas (I always use the chickpea water as a substitute for egg in other recipes, works well).
Fry the onions in butter, add garlic, ginger and chilli.
Then add all the spices and roast for a minute.
Add the tomatoes, a bit of broth and the strained chickpeas.
Let everything boil on small heat for about half an hour.
Add the cream, salt and pepper.
Garnish with fresh coriander and a spritz of lemon juice.
Tastes even better the next day
